had been working as the consultant master Brewer for Fire Island Beer since
early 2013, where he had worked to formulate two new beers and rework some of
the existing Fire Island offerings. Through this process he had realized that
his dream lay in brewing rather than his day to day job working as a Senior
Vice President at an Investment Bank in New York. In May this year he made the
switch to the world of Brewing and over lunch with David Van Wees, Founder of
Latis and Partner in Fire Island Beer Company it was evident that taking on
Fire Island would a great opportunity for Simon to continue his work on the
product but also set a platform for future growth of the Fire Island Brand. The
new structure will allow Fire Island Beer to be managed by a small team solely
dedicated to the growth of its brand.</i><o:p></o:p></div>

potentially a sister site in Connecticut. The original founders will still have
a stake in the Company and will be instrumental in helping move the Company

The following year he ordered a larger pig, maxing out the capacity of his Caja China, a roasting box popularized by the whole-pig roasters in the Miami Cuban community. A couple of years ago, he decided to make the most of his annual event, and began requesting a voluntary donation to IAVA. At that point, I also got to chat with Joshua Kirsch. In addition to being insanely talented, he’s also a very cool dude. Blue skies, over fifty fellow brewers and hundreds of guests packed into the lower level of Nassau Coliseum to carry around a 6 oz. tasting glass and swill over a hundred different beers.<br /><div><br /></div><div>Our booth snagged a lot of repeat visitors, and we’re fairly certain they weren’t coming back for our jokes. Everyone was getting riled up about our Lighthouse Ale and Red Wagon IPA! They were going wild, really. You could hear the crowd chanting for more all the way across the Sound in Connecticut. It was a veritable mosh pit in front of our booth, and no one would step down til their glass was refilled…</div><div><br /></div><div>Ok, so maybe it wasn’t quite that biblical. It’s kind of like asking grandpa how he met grandma- each story comes out a little bit different and nobody seems to have been around to verify any of them. Originally, the Native Americans called the Island "Sictem Hackey," or “Land of the Secatogues” (the name of the tribe located in Bay Shore, New York). The stories just get stranger from here, with some suggesting that the name comes from the fiery-looking foliage in autumn and others insisting (with a straight face) that the name comes from the “burning” rash people get from the Island’s abundant poison ivy (ouch!). So basically, if it was grandpa telling the story, you would have fed him an extra helping of plumb pudding and left the table long ago. A brick structure standing 168 feet tall with 182 winding steps, the Fire Island Lighthouse is the tallest lighthouse on Long Island.
